Red, orange and green falafel

You will need
  • 2 double handfuls chickpeas
  • 4 garlic cloves, crushed
  • 1 handful fresh parsley, chopped
  • 1 sweet potato (yum), peeled, boiled and puréed
  • 1 red (sweet) pepper, de-seeded and finely chopped
From the store cupboard

  • baking powder
  • olive oil
  • ground coriander
  • ground cumin
  • paprika (pimento)
Chakras are individual spinning wheels of energy that are found in the human body at precise locations. Each has a particular effect on a person´s mind and body. The root chakra is red, the colour of passion and general physical wellbeing; the sacral chakra is orange, the colour of health and vitality; and the heart chakra is green, the colour of warmth and love. This colourful dish prepresents these three colours. Share it with your friends and feel well, happy and loved. 

While you are blending the falafel mixture you can chant Saa Taa Naa Maa. This is the Panj Shabad mantra expressing the five primal sounds of universe. `S` is infinity, `T` is life, `N` is death and ´M´ is rebirth. The fifth sound, ´A´, connects the other letters to give one of the most frequently used mantras in Kundalini Yoga.

  • Soak the chickpeas in a glass bowl overnight: 2 parts water to 1 part chickpeas
  • Heat the oven to 200C
  • Crush the chickpeas and garlic together with the baking powder and a few drops of olive oil until yo achieve a rough paste that feels moist. Alternatively, mix the ingredients in a food processor. If the mixture is dry, add a few extra drops of oil.
  • Divide the mixture into three portions. Each portion will be used to make 1 of 3 different versions of falafel. Whilst doing this chant Saa Taa Naa Maa.
  • For the green portion, add the chopped parsley and 1 mudra pinch of ground coriander. Mix well.
  • For the orange portion, add the puréed sweet potato plus the puréed sweet potato ad 1 mudra pinch of groud cumin. Mix well.
  • For the red portion, add the chopped red pepper plus 1 mudra pinch of paprika. Mix wel.
  • Roll each mixture into small balls about the size of a walnut. You will get about 6 balls per mixture. 
  • Place the falafel on a lightly oiled baking sheet and place in the pre-heated oven.
  • Bake until the falafel turns a lovely, even golden brown. This will take between 22 and 31 minutes.
  • Serve with a variety of salads, Yogi Hummus, Sesam and Mint Sauce and pitta bread.
